Slice the white onion in half and dice it into large pieces and small pieces for topping.
Minced two cloves of garlic using a microplane or large grater.
Thinly slice two dill pickles and dice them into small pieces for topping.
Heat a pan over medium-high heat and add 1.5 tablespoons of olive oil.
Add 300 grams of beef mince and half of the large diced white onion to the pan with a pinch of salt, searing for 2 minutes.
Mix the beef mince and onion together, then add the minced garlic and cook for about 2 more minutes until browned.
Add 7 grams of ground cumin, 1.5 grams of red chili powder, 2.5 grams of smoked paprika, sea salt flakes to taste, and 10 cracks of black pepper. Cook for 45 seconds to enhance the flavor.
Add 15 milliliters of apple cider vinegar, 6 grams of brown sugar, 30 grams of ketchup, 15 grams of yellow mustard, and 100 grams of tomato paste. Mix well until combined.
Pour in 180 milliliters of beef stock, mix, and allow to come to a boil. Adjust seasoning if necessary, then cover and reduce heat to low, cooking for 15 minutes.
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Heat 4 cheese kranskies in the oven until hot throughout.
Slice the hot dog buns open without cutting all the way through and toast them in the oven for a couple of minutes until lightly toasted.
Remove the chili from the stovetop and check for seasoning, adjusting if necessary.
Assemble the chili cheese dogs by adding American cheddar cheese to the bottom of the buns, placing the sausages on top, and adding more cheese on top of the sausages.
Return the assembled hot dogs to the oven for 2-3 minutes to melt the cheese.
Top the hot dogs with the chili, white onion, dill pickles, and flat-leaf parsley if desired.
Serve with a variety of dipping sauces and enjoy.
