3 dried guajillo chiles
1 medium onion
4 cloves garlic
4 cups turkey stock
1 tablespoon salt
2 tablespoons vegetable oil
1 tablespoon Mexican oregano
1 teaspoon cumin
1 stick cinnamon
2 bay leaves
4 whole cloves
8 oz Oaxacan cheese
12 corn tortillas
