Season ground chicken with 1 teaspoon of salt, 6 seasoning peppers, onion powder, ginger garlic paste, 1 tablespoon of sofrito, paprika, ground cumin, garlic powder, chili powder, and Garlic Lovers seasoning. Mix everything together and cover with cling wrap to marinate.
Cut the tops and bottoms off the 4 ripe plantains, then cut them in half and boil in water with 1 teaspoon of salt until soft, about 10-15 minutes.
Sauté diced onions in a pan, adding a sprinkle of salt, then add the marinated ground chicken and cook until browned.
Add frozen peas and carrots to the chicken filling and cook through, adjusting seasoning as necessary.
Mash the boiled plantains in a bowl, adding gluten-free flour gradually, starting with 1 tablespoon and mixing until a dough forms, adding up to 6-7 tablespoons total.
Form the dough into balls and use a tortilla press to flatten each ball into a circle.
Place the chicken filling in the center of each circle, fold over, and seal the edges with a fork.
