Salted Caramel Chocolate Mousse Cups

Melt chocolate in the microwave in 30-second increments until fully melted.
Pour a little melted chocolate into the bottom of silicone cupcake liners.
Use a brush or the back of a spoon to spread the chocolate up the sides of the liners.
Place the chocolate-lined cups in the fridge to cool while preparing the mousse and caramel.
Whisk egg yolks together with sugar in a bowl.
Heat heavy cream, vanilla extract, and salt in a saucepan until hot but not boiling, watching for bubbles.
Slowly pour half of the hot cream mixture into the egg yolk mixture while whisking continuously to avoid cooking the eggs.
Pour the egg mixture back into the saucepan with the remaining cream and cook over low heat for about 5 minutes, stirring constantly until thickened to 170°F.
Remove from heat and stir in chocolate chips until melted and smooth.
Transfer the mixture to a container, cover, and chill in the fridge for 1-2 hours or in the freezer to speed up cooling.
Combine sugar and corn syrup in a saucepan and cook over medium heat, stirring occasionally until it starts to brown.
Once browning, stir constantly until it reaches a dark caramel color.
Add cream and butter to the caramel mixture, stirring until well combined, then add salt and vanilla.
Check the chocolate cups and peel away the silicone liners, leaving them in the muffin tin for support.
Whip heavy cream in a chilled bowl until stiff peaks form.
Fold a small amount of whipped cream into the cooled chocolate mixture to lighten it, then fold the chocolate mixture into the remaining whipped cream gently to maintain fluffiness.
Place the chocolate cups on a platter or keep them in the muffin tin.
Add a layer of cooled caramel to the bottom of each cup.
Top with the chocolate mousse, using a piping bag or a Ziploc bag with a cut corner to pipe it in.
Drizzle additional caramel on top of the mousse.
Sprinkle coarse salt on top for salted caramel flavor.
