Chicken Marengo

500 g cubed chicken breast
400 g chopped tomatoes
200 g sliced mushrooms
1 large chopped onion
1 tablespoon flour
1 bay leaf
1/4 teaspoon thyme
1/4 teaspoon black pepper
1/2 teaspoon salt
2 crushed garlic cloves
2 tablespoons olive oil
250 ml water

Heat 2 tablespoons of olive oil in a pan over medium-high heat.

Add 500 g of cubed chicken breast and brown on all sides for 3 to 4 minutes.

Add 1 large chopped onion and cook until the onion starts to brown.

Reduce heat, sprinkle in 1 tablespoon of flour, and cook while stirring for 2 minutes.

Add 2 crushed garlic cloves, 400 g of chopped tomatoes, and herbs (1 bay leaf, 1/4 teaspoon thyme, 1/4 teaspoon black pepper, 1/2 teaspoon salt). Stir well.

Pour in 250 ml (1 cup) of water and bring to a boil.

Once boiling, reduce heat, cover, and simmer for 15 minutes.

After 15 minutes, remove the lid and add 200 g of sliced mushrooms. Stir them in.

Cook uncovered on a gentle simmer for another 15 minutes.

Serve sprinkled with parsley and with rice, pasta, or lightly toasted French bread.
