Chicken Marengo

2 cups beef broth
1 shallot or onion
1 to 4 cloves of garlic

Preheat the pan.

Add olive oil to the preheated pan.

Add the chicken breast to the pan and cook for 10 minutes on each side.

Add the shallots or onions, cut in half and peeled, to the pan along with the garlic cloves.

Cook the chicken with the onions and garlic for 10 minutes on each side.

After frying the chicken, add 1/4 cup of flour slowly to the pan and mix until it forms a nice roux.

Add back the onions, garlic, and herbs to the pan.

Pour in 2 cups of beef broth and let it simmer for around 10 minutes until thick and creamy.

Strain the sauce using a mesh strainer to remove larger bits.

Sauté the optional mushrooms in butter and add them to the sauce.

Taste test the sauce and adjust seasoning if necessary.
