Add granulated sugar and brown sugar to the bowl and mix until well combined, resembling applesauce.
Add 3 eggs to the mixture and continue mixing.
Add vanilla extract to the mixture.
Grate carrots using three different textures and add them to the bowl.
In a separate bowl, combine all-purpose flour, baking soda, salt, cinnamon, nutmeg, and clove.
Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until fully combined.
Pour the batter into greased and floured cake pans.
Bake at 350°F for 15 to 18 minutes, checking to avoid overbaking.
Let the cakes cool in the pans until warm to the touch, then flip them out to cool completely.
Prepare cream cheese frosting, allowing it to soften if needed before frosting the cakes.
Frost the cooled cakes and optionally decorate with pecans.
