Preheat the oven to 200°C (400°F).
Slice the eggplant into rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
Rinse the eggplant slices and pat dry with a towel.
Brush the eggplant slices with sunflower oil on both sides.
Arrange the eggplant on a baking sheet and roast for 20-25 minutes until golden and tender.
While the eggplant roasts, prepare the honey sauce by mixing sunflower honey, lemon juice, and minced garlic in a bowl.
Finely chop the fresh herbs and mix them into the honey sauce.
In a skillet, heat a little sunflower oil over medium heat and sauté chopped onions until translucent, about 5 minutes.
Add diced tomatoes to the skillet and cook until softened, about 5 minutes.
Stir in walnuts and chili flakes, cooking for another 2-3 minutes.
Once the eggplant is roasted, layer it on a serving platter.
Drizzle the honey sauce over the eggplant and top with the sautéed tomato mixture.
Garnish with pomegranate seeds and additional fresh herbs before serving.
