Greek Chicken and Grape Tabbouleh

1 lb boneless, skinless chicken breasts
1/4 cup souvlaki marinade
1 cup quinoa
1/4 cup green onions, chopped
2 tbsp vinegar
1/4 cup fresh mint, chopped
1/4 cup fresh parsley, chopped
1 cup red grapes, halved
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
