Heat vegetable oil in a large pot over medium heat until shimmering.

Add chopped garlic, ginger, and onion; sauté until fragrant, about 2-3 minutes.

Add chicken pieces to the pot; cook until browned on all sides, about 5-7 minutes.

Pour in chicken broth; bring to a boil, then reduce heat to simmer.

Season with fish sauce, soy sauce, salt, and black pepper; stir to combine.

Simmer the broth for 15-20 minutes until chicken is cooked through.

Remove chicken from the pot; shred into bite-sized pieces.

Return shredded chicken to the pot; add soaked rice noodles.

Cook noodles in the broth for 5-7 minutes until tender.

Adjust seasoning with more fish sauce or salt if needed.

Serve hot, garnished with chopped green onions, cilantro, and lime wedges.

Sprinkle chili flakes on top for added heat, if desired.
