Heat milk until lukewarm and add half to a large mixing bowl with half of the sugar.
Add active dry yeast to the mixture, cover, and let sit for 10-15 minutes until frothy.
Add eggs, remaining sugar, and vanilla essence to the yeast mixture and whisk until combined.
Add half of the flour and a pinch of salt to the mixture and mix.
Add the remaining flour and mix until combined.
Transfer the dough to a clean work surface and knead for a few seconds.
Add soft butter to the dough and knead until well incorporated, about 15-20 minutes until smooth and elastic.
Transfer the dough to a lightly oiled bowl, cover with plastic wrap and a kitchen towel, and let rest at room temperature for 30-40 minutes until doubled in size.
Punch down the dough to release air, then divide and shape into small balls weighing 70g each.
Roll the dough balls on a floured surface and place them in a bowl with flour, covering them with flour on top.
Cut parchment paper into pieces and set aside.
Shape the doughnuts using measuring cups, creating holes in the middle, and place them on parchment paper.
Cover the shaped doughnuts with a kitchen towel and let them sit at room temperature for 40-50 minutes until doubled in size.
Preheat vegetable oil in a frying pan on low heat.
Fry the doughnuts until golden brown on both sides, then transfer to paper towels to absorb excess oil.
Optionally, top with powdered sugar or granulated sugar.
