50g onion

2 or 3 garlic cloves
few curry leaves
400ml thin coconut milk
100ml tamarind juice
1 ¼ tablespoons curry powder
¼ teaspoon fenugreek seeds
¼ teaspoon turmeric powder
¼ teaspoon sugar
1 tablespoon cooking oil
salt to taste
water as needed

Cut the bitter gourd into 2-inch pieces and soak in a bowl with salt and water for 10 to 15 minutes.

Prepare curry powder, turmeric powder, sugar, fenugreek seeds, and curry leaves. Slice the onions, green chilies, and garlic cloves.

Prepare thin coconut milk and tamarind juice.

Rinse the soaked bitter gourd pieces thoroughly in normal water.

In a cooking pan, combine the rinsed bitter gourd, curry powder, turmeric powder, sugar, and fenugreek seeds.

Add sliced onions, garlic cloves, green chilies, and curry leaves.

Add one tablespoon of cooking oil, tamarind juice, and coconut milk.

Mix well and switch on the flame.

Cook covered for 10 to 12 minutes on high flame. Stir and mix everything well after removing the lid.

Cover and cook again for 8 to 10 minutes on low flame.
