Slice off the bottoms of 3 bell peppers to help them stand up straight.
Cut the tops off the bell peppers and remove the membrane inside.
Preheat the oven to 350 degrees Fahrenheit.
Place the bell peppers in the oven for about 15 minutes to soften them.
Trim excess fat from 1/2 pound of ribeye steak and thinly slice the meat.
Drizzle olive oil into a pan and heat to medium-high.
Add the sliced ribeye steak to the pan and cook.
Season the steak with 1 teaspoon of salt, 1 teaspoon of ground black pepper, 1 teaspoon of garlic powder, and a pinch of cayenne pepper.
Add onion to the pan with the steak and caramelize it to your preference.
Once the steak is cooked, assemble the stuffed peppers by adding cooked white rice to each pepper.
Layer the cooked steak and onion mixture into the bell peppers on top of the rice.
Place a slice of provolone cheese on each stuffed bell pepper.
Broil the stuffed bell peppers in the oven until the cheese is golden brown.
