Authentic Somali Rice

Toast cumin seeds, coriander seeds, and peppers in a pan on medium heat.

Crush the toasted spices with a pestle or blend them if you have powdered spices.

In a large pot, heat 1 cup of vegetable oil and add 1 whole chopped onion; sauté until brown and caramelized.

Add 4 crushed cloves of garlic and 1 teaspoon of crushed ginger; sauté until fragrant.

Add 1 dried lemon, 1 stick of cinnamon, 4 pieces of cardamom, and 1/2 teaspoon of turmeric; stir to combine.

Pour in 5 cups of hot water and add salt to taste; bring to a boil.

Cook for 7 to 10 minutes, being careful not to over-stir the rice.
