Cinnamon buns have long been a beloved treat in American bakeries, often enjoyed for breakfast or as a sweet snack. These muffins capture the essence of traditional cinnamon rolls in a more portable form, making them perfect for brunch or a quick breakfast on the go. Today, variations abound, with many bakers adding nuts, cream cheese frosting, or even fruit to the mix.
Preheat the oven to 400 degrees Fahrenheit.
In a large bowl, combine 2 cups all-purpose flour, 1/4 cup sugar, 3 teaspoons baking powder, and 1/2 teaspoon salt. Mix until well combined.
In a separate bowl, add 3 tablespoons of melted butter and 1 cup of milk. Mix until well combined.
Using a whisk attachment, combine the milk and butter mixture with the dry ingredients, then switch to a paddle attachment and slowly add in the flour mixture. Mix until well combined.
Add 1 egg to the mixture and mix until well combined.
In another bowl, combine 1 cup brown sugar, 3 teaspoons ground cinnamon, 1 1/2 cups coarsely chopped pecans or walnuts, and 3 tablespoons melted butter. Mix until well combined.
Split the nut mixture in half; add half into the batter and fold it in gently until mixed.
Lightly coat a muffin tin with coconut oil spray. Use an ice cream scooper to divide the batter into each muffin cup.
Top each muffin with the remaining nut mixture, pressing it gently into the batter.
Bake the muffins in the oven at 400 degrees for 12 to 15 minutes.
After baking, check the muffins and let them cool down.
To make the frosting, combine 1 cup powdered sugar, 2 ounces softened cream cheese, 1 tablespoon milk, and a dash of vanilla extract in a mixer with a lift attachment and blend together.
Transfer the cooled muffins to a cookie sheet or cooling rack.
Decorate the muffins with frosting using a piping bag or a knife.
