Prepare the strawberry topping by combining fresh strawberries, sugar, water, and lemon juice in a saucepan. Cook until the mixture thickens, then add frozen strawberries and set aside to cool.
Preheat the oven to 325°F (163°C).
In a mixing bowl, combine crushed vanilla wafers, sugar, and melted butter to create the crust. Press the mixture into the bottom of a greased springform pan.
In another bowl, beat together cream cheese, sour cream, sugar, flour, eggs, and vanilla until smooth to make the cheesecake batter.
Pour the cheesecake batter over the crust in the springform pan.
Prepare a water bath by placing the springform pan in a larger roasting pan and adding enough water to come halfway up the sides of the springform pan.
Bake in the preheated oven for about 1 hour or until the center is set but still slightly jiggly.
Remove from the oven and let cool before refrigerating for at least 4 hours or overnight.
Once chilled, top with the prepared strawberry topping before serving.
