Heat a skillet on medium-high heat and add 3 tablespoons of vegetable oil.

Cut chicken thighs into about one-inch pieces and season with salt and black pepper.

In the same pan, leave about 2 tablespoons of fat and add 1 small diced onion and 8 ounces of cleaned and quartered mushrooms.

Add 3 diced ripe plum tomatoes to the pan and cook for 3-4 minutes until the tomatoes start to soften and break down.

Add 5 large cloves of minced garlic and 1 tablespoon of tomato paste, cooking for 1 minute until the garlic is fragrant and the tomato paste is dispersed.

Pour in 1/4 cup of white wine and add 1/4 teaspoon each of salt and black pepper, cooking for a couple of minutes.

Add a colorful bouquet of green, yellow, and red bell peppers and 1 cup of diced zucchini, stirring well and covering to simmer for 5 minutes, stirring occasionally.

Add the chicken and all the juices back into the pan, stirring to incorporate.

Add 1/2 cup of chicken broth just enough to coat the bottom, cover, and simmer for another 5 minutes.

Add a couple sprigs of fresh oregano and about 1/2 cup of fresh basil leaves, stirring one last time.
