Beef Casserole

1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 cup corn kernels (fresh or frozen)
1 cup beef broth
2 cups cooked rice
1 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
1 cup shredded cheddar cheese

Preheat the oven to 350°F (175°C).

In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.

Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.

Stir in the diced tomatoes, kidney beans, corn, beef broth, chili powder, cumin, salt, and black pepper. Bring to a simmer.

In a large mixing bowl, combine the cooked rice with the beef mixture, stirring until well combined.

Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.

Top the casserole with shredded cheddar cheese.
