Cottage Cheese Egg Bake

Preheat your oven to 400°F.

Line a baking pan with parchment paper or a silicone mat.

Add turkey bacon to the baking pan.

Place the bacon in the oven for about 20 minutes, depending on how crispy you like it.

Chop half of each bell pepper and set aside.

Add 1 cup of cottage cheese into a food processor and blend until smooth (a blender can also be used).

Remove the bacon from the oven and let it cool.

In a medium-sized bowl, add 8 eggs and whisk them together.

Add the blended cottage cheese to the eggs and mix well.

Season the mixture with salt and pepper and mix again.

Add the chopped bell peppers to the egg mixture.

Chop 4 pieces of cooked bacon and add to the bowl.

Add about 1/2 cup of cheese to the mixture and mix everything together.

Spray an 8x8 casserole dish with non-stick cooking spray.
