2 pounds frozen chopped clams
1 bottle white wine
3 garlic cloves

1 teaspoon red chili flakes

1/2 cup olive oil
1 cup port wine
1 cup roasted peanuts, chopped
2 tomatoes, seeded and diced
salt and pepper to taste
1 teaspoon crushed red pepper
5 ounces fresh spinach, chopped

Heat 2 tablespoons of olive oil in a large saucepan over medium heat.

Add the garlic, thyme sprigs, and red chili flakes; sauté until fragrant, about 1-2 minutes.

Add the white wine and after 1-2 minutes, add in the drained chopped clams; let them gently boil for 1-2 minutes.

Drain the clams, picking out the garlic and thyme, and place the clams on a paper towel-lined plate; cover and refrigerate to halt the cooking process.

Rinse the saucepan and over medium heat, heat the 1/2 cup of olive oil until shimmering.

Add in the diced onion and sauté until softened, about 2-3 minutes.

Add in the port wine, chopped peanuts, diced tomatoes, and salt and pepper to taste; stir in the other teaspoon of red chili flakes and let simmer for 30 minutes, stirring occasionally.

Add the spinach and stir until wilted, about 2 minutes before serving.

Add in the chopped clams and cook for the last 2 minutes before serving over rice.
