Smoked Stuffed Flank Steak

Get the pellet smoker going and ensure it is hot, around 435°F.
Trim excess fat and silver skin from the flank steak.
Add 2-3 cups of fresh spinach to the inside of the flank steak.
Add roasted bell peppers (optional) to the spinach.
Add crumbled feta cheese to the mixture.
Flatten the filling down to make rolling easier.
Roll the flank steak tightly, keeping the filling inside, and tie it with kitchen string every three inches.
Coat the outside of the rolled flank steak with olive oil.
Season the outside with Jack Daniel's beef rub and Jack Daniel's steak seasoning.
Prepare carrots by mixing melted butter and brown sugar to create a paste.
Toss the carrots in the butter and brown sugar mixture, adding a little beef rub for seasoning.
Place the carrots on a sheet pan alongside the flank steak.
Cook the sheet pan dinner in the pellet smoker at 450°F for 15-20 minutes until the internal temperature of the steak reaches 125°F.
Let the steak rest for about 10 minutes before slicing.
