Thaw puff pastry sheets on the counter for about 40 minutes.
Pour contents of both cans of chickpeas into a colander and rinse well.
Squeeze juice from one large lemon into a bowl.
Peel 4 cloves of garlic and have them ready.
Preheat oven to 350 degrees Fahrenheit.
Add rinsed chickpeas to a blender.
Add garlic, lemon juice, olive oil, tahini, cumin, paprika, and salt to the blender.
Pulse the blender to combine ingredients, stirring occasionally with a spatula.
Add water gradually to achieve desired creamy texture, about a quarter cup total.
Taste the hummus and adjust seasoning if necessary.
Transfer hummus to a bowl for filling the puff pastry.
Cut each puff pastry sheet in half, then into triangles for filling.
