Cut unsalted butter, vegetable shortening, and cream cheese into small pieces and place on a plate.
Put the plate in the freezer for 30 minutes to keep the ingredients cold.
In a food processor, combine all-purpose flour and salt, then add the cold cream cheese and pulse until crumbly.
Add the cold unsalted butter and vegetable shortening to the food processor and pulse until well distributed.
While pulsing, add 4 to 5 tablespoons of cold water, one tablespoon at a time, until the dough holds together but is still crumbly.
Dump the dough onto a board, avoiding adding extra flour to keep it flaky.
Divide the dough into two pieces, wrap each in plastic wrap, and flatten into discs.
Refrigerate the dough for about 1 hour.
After an hour, take the dough out and let it sit for 5 to 10 minutes to come to room temperature.
Peel and cut fresh yellow peaches into half-inch pieces.
In a bowl, combine the peaches with a little peach preserves, flour, sugar, and a tiny bit of vanilla paste, and mix well.
Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
Beat together an egg with a little cream to make an egg wash.
Flour the board and roll out the dough to a thickness between 1/8 inch and 1/4 inch.
Use a 4.5-inch biscuit cutter or tart pan to cut out dough shapes.
Take some filling and place it on one half of the dough cutout, leaving space to seal.
