1/2 cup parsley, rough chopped

Clean chicken thighs by removing excess fat and any bone fragments, cutting large pieces in half if necessary.

Heat a hard anodized 4-quart pan over medium heat and add olive oil until shimmering.

Add the seasoned chicken thighs to the pan, placing them away from you to avoid splashing oil.

Sear the chicken for about 5 minutes on the first side, then flip and cook for 3-4 minutes on the second side until browned.
