Maltese Cannoli

Heat oil in a deep fryer to 350°F (175°C).
Fry cannoli shells until golden brown, about 2-3 minutes per side.
Remove from oil and drain on paper towels.
Let shells cool before removing from forms.
In a bowl, mix ricotta cheese, vanilla extract, and powdered sugar until smooth.
Fold in chocolate chips and candied fruit into the ricotta mixture.
Fill cooled cannoli shells with the ricotta mixture using a piping bag.
Dust filled cannoli with powdered sugar before serving.
