Irish Boxty

Cultural Context

Originating from the rural kitchens of Ireland, boxty is a traditional potato dish that reflects the importance of potatoes in Irish cuisine. Often served on St. Patrick's Day or during family gatherings, it symbolizes comfort and home-cooked meals. Today, variations exist globally, with many adding different herbs or spices to suit modern tastes.

1

Grate 600 grams of peeled flowery potatoes.

2

Wash the grated potatoes in cold water to remove excess starch and drain well.

3

Squeeze out excess moisture from the potatoes.

4

Add a pinch of salt to the drained potatoes and stir well, then let sit for around half an hour to draw out more moisture.

5

After half an hour, dispose of the starch layer that forms at the bottom of the bowl.

6

Season the dried potatoes with another pinch of salt and a generous dusting of pepper.

7

Add 50 grams of melted butter to the potatoes and mix well.

8

Incorporate 50 grams of all-purpose flour into the mixture using your hands to mash it together.

9

Optionally, refrigerate the mixture for about half an hour to make it easier to form patties.

10

Preheat a frying pan over medium heat and oil it generously.

11

Form thin patties from the potato mixture, no thicker than 1 centimeter.

12

Cook the patties in the preheated pan for around 5 to 7 minutes until deep golden on one side.

13

Flip the patties and cook for another 5 to 7 minutes until golden on both sides.
