Classic Chicken Salad

1 rotisserie chicken (mesquite flavor)
2-2.5 cups chopped chicken
1 cup red grapes (quartered)
1/4 red onion (diced)
1 rib of celery (diced)
1 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon black pepper
fresh bakery croissants (for serving)
lettuce (for serving)
tomatoes (for serving)

Remove the skin from the rotisserie chicken and debone it.

Chop the chicken into bite-sized pieces and place it in a bowl.

Quarter the red grapes and add them to the bowl with the chicken.

Dice about a quarter of a red onion and add it to the bowl.

Cut the rib of celery into small pieces and add it to the bowl.

Mix the chicken, grapes, onion, and celery together.

Add 1 cup of mayonnaise to the mixture, starting with half a cup and adjusting as needed.

Add 1/4 teaspoon of salt and 1/4 teaspoon of black pepper to the mixture.

Blend all the ingredients together until well combined.

Serve the chicken salad on fresh bakery croissants with lettuce and tomatoes.
