Classic Chicken Salad

2 cups cooked chicken breast, shredded
1/2 tsp salt
1/4 tsp black pepper
1 clove garlic, minced
1/4 cup red onion, diced
1/2 cup celery, diced
1/2 cup mayonnaise

Start with chicken breast on the bone, leaving the skin on for more flavor.

Boil the chicken in a pot covered with water, adding a little salt.

Simmer the chicken for a while until cooked.

Once cooked, pull the chicken off the bone and shred it while it's hot (wear gloves if desired).

Dice about a quarter of a large onion.

Chop two stalks of celery.

If using more than two chicken breasts, adjust the amount of celery and onion accordingly.
