Classic Chicken Salad

6 chicken breasts
1 and 1/2 cups celery
2 cups mayonnaise
3/4 cups dill pickles
4 garlic cloves
1 lemon
1 bay leaf

Simmer chicken breasts in a pot with spices and aromatics: celery, onion, garlic cloves, lemon (halved and squeezed), bay leaf, thyme, parsley, salt, and pepper.

Bring the pot to a boil, then reduce to a simmer until the chicken is cooked through.

Remove the chicken from the pot and let it cool before shredding it into smaller pieces.

Chop celery into small pieces (about 1 and 1/2 cups).

In a bowl, combine the shredded chicken, chopped celery, 2 cups of mayonnaise, and 3/4 cups of dill pickles (including some juice).

Mix all ingredients together thoroughly, adding half a teaspoon of pepper and tasting for seasoning.

Serve the chicken salad on a piece of toast or as desired.
