Classic Chicken Salad

2 lb bone-in skin-on chicken breasts
4 cups water
1/4 cup apple cider vinegar
1/2 tsp salt
1/2 cup celery, diced
1/4 cup red onion, diced
1 tbsp lemon juice
1 tsp mustard
1/4 tsp ground black pepper
1/2 tsp garlic powder
1/2 cup mayonnaise
4 slices toasted bread

for garnish sliced tomato
for garnish pickles

Cook the chicken in a pressure cooker (Instant Pot) with water, a splash of apple cider vinegar, and salt.

Seal the lid and pressure cook for 15 minutes.

While the chicken is cooking, chop celery into small dice and place it in a bowl.

Chop red onion and add it to the bowl with the celery.

Squeeze lemon juice over the vegetables and mix, then set aside.

Once the timer goes off, release the pressure from the Instant Pot.
