Melt the chocolate using a water bath (bain marie) in an aluminum bowl over boiling water, ensuring the water does not touch the bowl.
Once melted, set the chocolate aside to cool completely before using.
Sift together unsweetened cocoa powder, baking powder, and cinnamon powder twice to avoid lumps.
In a mixing bowl, pour in sunflower oil and add fine brown sugar, mixing until fully incorporated.
Add a medium egg and the melted chocolate to the mixture, mixing first with a spatula and then with a hand whisk until fully combined.
Add milk to the mixture to prevent the crinkles from becoming dry.
Pour the sifted powdered ingredients into the wet mixture, mixing until just combined to avoid overmixing.
Cover the dough with plastic wrap and refrigerate for 3 to 4 hours or freeze for 30 minutes to manage the dough better and prevent spreading.
After chilling, scoop the dough using a tablespoon and roll it into balls, washing hands as needed due to stickiness.
Lightly coat each ball in granulated sugar, then roll in powdered sugar to ensure it sticks well after baking.
Place the dough balls on a baking pan lined with parchment paper, spacing them 5 cm (2 inches) apart.
If there is leftover dough, roll it into balls without coating in sugar, cover with plastic wrap, and refrigerate until ready to bake.
Preheat the oven to 180°C (350°F) and bake the cookies for 12 to 14 minutes, ensuring the oven is fully preheated.
Check for cracks on the top of the cookies to know they are ready, and avoid overcooking to prevent drying out.
Let the cookies cool on the baking pan for 10 minutes before transferring them to a cooling rack to cool completely.
