Place provolone cheese over the steak mixture; cover the skillet until cheese melts, about 1-2 minutes.
Slice hoagie rolls lengthwise without cutting all the way through.
Spread butter on the inside of the rolls; toast on a skillet until golden brown.
Fill each roll with the steak and cheese mixture.
Top with mushrooms if desired; serve immediately.
