Turkey Meatloaf Muffins

454g ground lean turkey meat (1 pack)
1/2 cup rolled oats
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/2 onion, skin removed
1 red bell pepper, de-seeded
1 jalapeno, stem removed
1 tbsp olive oil
2 eggs
1 tsp ground cumin
1 tsp paprika
1 tsp dried oregano
1 tsp garlic powder
Salt & Pepper to taste

Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the ground turkey, rolled oats, breadcrumbs, grated Parmesan cheese, chopped onion, chopped red bell pepper, and jalapeno.

Add the olive oil, eggs, ground cumin, paprika, dried oregano, garlic powder, yellow mustard, salt, and pepper to the bowl.

Mix all the ingredients together until well combined, but do not overmix.

Grease a muffin tin with cooking spray or line with muffin liners.

Scoop the turkey mixture into the muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).

Remove from the oven and let cool for a few minutes before removing from the muffin tin.

Serve warm.
