Start by making the pie pastry using 2 and 1/2 cups of all-purpose flour, 8 tablespoons of butter, 2 tablespoons of sugar, and 1/4 to 1/2 teaspoon of salt.
Pulse the flour, sugar, and salt in a food processor.
Add the chilled butter and vegetable shortening to the flour mixture and cut it in until the texture is right.
Gradually add water until the dough comes together, ensuring it is malleable enough to roll out.
Wrap the dough and refrigerate overnight to hydrate and rest.
Roll out the dough to about 12 to 14 inches in diameter, using a tapered rolling pin.
Place the rolled dough onto a baking sheet and refrigerate while preparing the apples.
Prepare the apples by using three or four varieties, peeling, coring, and slicing them.
Mix the sliced apples with 1/3 cup sugar, a tablespoon of flour, 1/4 teaspoon cinnamon, and lemon juice to prevent oxidation.
Place the rolled out dough into the pie plate, ensuring it fits snugly.
Add the apple mixture into the pie crust, leaving some overlap for the top crust.
Cover with the top crust, sealing the edges and cutting vents for steam to escape.
Brush the top crust with water and sprinkle with sugar for a glaze.
Bake in a preheated oven at 425°F (220°C) for 20 minutes, then reduce the temperature to 375°F (190°C) until the crust is golden and juices are bubbling.
