Start with 1 gallon of water and pour it over 6 black organic tea bags to brew a sweet tea.

For the secondary fermentation, take kombucha from the primary ferment and add flavorings.

Add 1/2 teaspoon of almond extract to the mixture, adjusting to taste.

Add 1/2 teaspoon of sugar (evaporated cane juice crystals) to feed the probiotics.

Use a funnel to pour about 4 cups of kombucha into the flavored mixture, filling the bottle mostly to the top.

Seal the bottle tightly and let it sit at room temperature for about 3 to 5 days, checking for fizziness and color change.
