Today, ravioli are enjoyed worldwide, with countless variations, from classic cheese to modern takes featuring innovative fillings and sauces.

Start by measuring 4 cups of flour into a mixing bowl.
Add 1 teaspoon of salt to the flour.
Turn on the mixer and let it mix for a bit.
In a separate bowl, beat together 6 large eggs and 4 tablespoons of cold water.
Add the egg mixture to the flour in the mixer.
Use a KitchenAid mixer with a dough hook on speed setting number two to mix the ingredients.
Scrape the sides of the bowl with a spatula to combine all the flour and egg.
If the dough is too sticky, remix it to combine better.
Cover the dough in saran wrap and let it sit for 20 minutes.
While the dough rests, chop 1 medium onion and sauté it in extra virgin olive oil.
Add 1 tablespoon of garlic to the onions and sauté together.
Add 2 packs of ground chicken to the pan and season with 1.5 tablespoons of garlic powder, 1.5 tablespoons of onion powder, black pepper, and 0.5 to 1 teaspoon of pink Himalayan salt.
Mix everything together and cook until the chicken is no longer pink, about 20 to 30 minutes on medium heat.
Once cooked, transfer the meat mixture to a Ninja food processor and pulse to achieve a coarse texture.
In a large bowl, combine the processed meat with 2 tablespoons of mayo, the entire tub of ricotta cheese, 1 cup of shredded three cheese blend, 0.5 cup of grated Parmesan Romano cheese, and 2 cups of shredded mozzarella.
Chop fresh parsley and add it to the mixture.
