Stir in ginger and garlic paste, cooking until fragrant, about 2 minutes.
Add the mutton trotters to the pot and brown on all sides, about 8-10 minutes.
Mix in turmeric, red chili powder, cumin seeds, and coriander powder, cooking for 2 minutes.
Pour in enough water to cover the trotters and bring to a boil.
Reduce heat to low, cover, and simmer for 4-6 hours until the trotters are tender.
Stir in yogurt, mixing well, and simmer for an additional 30 minutes.
Add salt and adjust seasoning to taste before serving.
Garnish with chopped coriander and mint leaves.
Serve hot with lemon juice on the side.
