1 ½ cups (195 grams) all-purpose flour
3/4 cup (150 grams) granulated sugar
1 tablespoon granulated sugar (for muffin tops)
1/4 teaspoon fine sea salt
2 teaspoons baking powder
1/3 cup (80 ml) neutral-flavored oil (canola, vegetable, or grape seed)
1 large egg
1/3 to 1/2 cup (80 ml – 120 ml) milk (dairy or non-dairy)
1 ½ teaspoons vanilla extract
6 to 8 ounces fresh or frozen blueberries (about 1 cup)

Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease it.

In a large bowl, combine the flour, sugar, salt, and baking powder.

Add the oil, egg, milk, and vanilla extract to the dry ingredients and mix until just combined.

Gently fold in the blueberries.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Sprinkle the tops with the additional tablespoon of sugar.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
