Blueberry Muffins

1 ½ cups all-purpose flour
¾ cup granulated sugar
½ tsp salt
2 tsp baking powder
⅓ cup vegetable oil
1 large egg
⅓–½ cup milk (as needed to reach 1 cup liquid when combined with the oil & egg)
1 ½ tsp vanilla extract
1 cup fresh or frozen blueberries (if frozen, do not thaw)
½ cup granulated sugar (for streusel)
⅓ cup all-purpose flour (for streusel)
¼ cup butter, cold and cut into cubes

Preheat oven to 400°F (205°C).

Line a 12-cup muffin pan with liners.

In a medium bowl, whisk together flour, sugar, salt, and baking powder.

In another bowl, whisk vegetable oil, egg, vanilla, and enough milk to make 1 cup liquid total.

Pour the wet ingredients into the dry ingredients and mix just until combined.

Gently fold in the blueberries.

In a small bowl combine sugar, flour, and cinnamon for the streusel.

Cut in the cold butter using a fork or your fingers until crumbly.

Fill muffin cups all the way to the top for bakery-style muffins.

Sprinkle generously with streusel.

Bake for 18–22 minutes, or until the tops are golden and a toothpick comes out clean.
