Whipped cream is lighter and can be made without sugar.
Add 1/2 tablespoon of vinegar to 1/2 cup of heavy whipping cream to make buttermilk.
Sift together 2 cups of super fine almond flour, 1/4 cup of coconut flour, 1/2 cup of cocoa powder, 1/4 teaspoon of espresso powder, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 1/4 teaspoon of salt in a bowl.
In another bowl, mix 4 room temperature eggs until broken and well combined.
Add 2-3 teaspoons of vanilla extract to the eggs.
Pour the heavy cream mixture into the eggs and mix well.
Add 4 ounces of melted butter and 1/2 cup of melted coconut oil to the wet ingredients and mix until combined.
Combine the dry ingredients with the wet ingredients, mixing well but do not over mix; finish with a spatula to ensure everything is well combined.
Spray cake pans with cooking spray (no parchment paper needed) and evenly distribute the batter between the pans.
Use a knife to cut through the batter to remove air pockets, then bang the pans on the table to eliminate any remaining air.
Bake in the oven for 35-40 minutes, checking for doneness.
Once baked, let the cakes cool for a bit before sealing and placing in the fridge overnight for cooling.
