Add 4 tablespoons of water to the mixture and grind until it forms a dough-like consistency.
Press the almond mixture into mini cupcake molds to form the crust.
Place the crusts in the freezer to solidify.
Blend one of the apples with 1 cup of soaked raw cashews, 1 tablespoon of maple syrup, 1/2 teaspoon of lemon juice, and 1/4 teaspoon of vanilla extract until smooth.
Spoon the cheesecake filling into the crusts, leaving space for apple chunks on top.
Peel and dice the second apple and place the chunks on top of the filling in each crust.
Pop the filled molds back in the freezer to set.
