Sicilian Pizza

28 oz crushed tomatoes
1 teaspoon sugar
1 teaspoon granulated garlic
1/4 teaspoon black pepper
1 teaspoon salt
1 teaspoon dried basil leaves
1 tablespoon olive oil
1/2 cup diced onion
1/4 cup olive oil
2 pieces anchovies
12 oz mozzarella cheese
mild Italian sausage

colamada olives

Heat 2 cups of bottled water to about 90°.

Add 3/4 ounce of dried yeast to the water and let it sit for about 2 minutes.

Mix the yeast into the water for about a minute.

Add 2 teaspoons of sugar to the mixture and dissolve.

Add 2 tablespoons of salt and dissolve.

Add 2 teaspoons of extra virgin olive oil and mix.

Add 6 cups of King Arthur flour and mix until a dough ball forms (about 15 minutes).

Oil the bottom of the bowl to prevent sticking and let the dough rest for 20 minutes.

After resting, split the dough and shape into balls by rolling and tucking.

Oil the pan and place the dough balls in it, cover, and let rise for 20-30 minutes before refrigerating overnight.

After proofing overnight, preheat the oven to 120° and turn it off.

Add 1/4 cup of olive oil to the pan and smear it around with plastic wrap.

Stretch the dough into the pan gently and place it back in the oven to rise for another 45 minutes to 1 hour.

Prepare the pizza sauce by mixing 28 oz crushed tomatoes with 1 teaspoon sugar, 1 teaspoon granulated garlic, 1/4 teaspoon black pepper, 1 teaspoon salt, 1 teaspoon dried basil leaves, and 1 tablespoon olive oil. Refrigerate for at least 30 minutes.

After the dough has risen, stretch it into the pan evenly and create a crust.

Add watered down tomato sauce to keep the top moist and let it rise for another 45 minutes to 1 hour in the oven.

In a pan, heat 1/2 cup diced onion with 1/4 cup olive oil, adding a little salt and black pepper, and 2 pieces of anchovies until dissolved.

Check the dough after 2 hours of rising and preheat the oven to 450°.

Bake the crust for 10 minutes until lightly golden brown.

Remove the crust and check the bottom for golden brown color.

Spread about 12 oz of tomato sauce on the crust.

Add the onion mixture evenly over the sauce.

Sprinkle oregano on top.

Add 12 oz of shredded mozzarella cheese.

Top with mild Italian sausage, bell peppers, and colamada olives.

Return the pizza to the oven for another 10 minutes.
