Put 4 cups of frozen pitted tart cherries into a saucepan.
Turn the heat on low and let the juices come out of the cherries.
Once the juices are released, increase the heat to medium-high and bring to a boil.
In a separate measuring cup, mix 1/4 cup of cornstarch with 1/4 cup of water and whisk until smooth.
When the cherries reach a boil, add 2/3 cup of sugar and stir until fully dissolved.
Add the cornstarch slurry to the boiling cherry mixture and stir continuously until thickened.
Remove from heat and let the filling cool before using it.
