Sheet Pan Chicken Thighs with Potatoes & Feta Cheese

6 chicken thighs bone-in with skin
2 lbs yukon gold potatoes cut into cubes
4 tbsp (divided) extra virgin olive oil
2 tbsp lemon juice
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
½ tsp dried oregano
⅓ cup feta cheese

Preheat the oven to 425°F (220°C).

In a large bowl, combine the chicken thighs, halved baby potatoes, olive oil, dried oregano, garlic powder, salt, and black pepper. Toss until everything is well coated.

Arrange the chicken thighs skin-side up on a large sheet pan. Scatter the potatoes around the chicken.

Place lemon slices on top of the chicken thighs and potatoes.

Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy.

Remove the sheet pan from the oven and sprinkle crumbled feta cheese over the chicken and potatoes.

Return to the oven for an additional 5 minutes to allow the feta to warm and slightly melt.

Remove from the oven and let it rest for a few minutes.

Garnish with fresh parsley before serving.
