Peel all the apples.
Chop the apples into 1-inch pieces, ensuring they are of similar size.
Place the chopped apples into a pot.
Turn the heat to medium and add 1 and 1/2 cups of water to the pot.
Add 1 and 1/2 tablespoons of fresh lemon juice to the pot.
Add 1/4 teaspoon of kosher salt to the pot.
Add 1/2 teaspoon of ground cinnamon and 1/4 teaspoon of ground clove to the pot.
Stir the mixture and partially cover the pot.
Let the apples simmer for 30 minutes.
After 30 minutes, check the apples; they should be breaking down.
Add brown sugar to the pot, stirring it in.
If the pot looks dry, add a few splashes of water (about 1/4 cup).
Simmer the mixture with the lid off for another 15 minutes.
Check the texture of the applesauce; it can be served as is or blended for a smoother consistency.
For a smoother texture, use a food processor or blender.
For a chunkier texture, use a potato masher or immersion blender.
Adjust sweetness with more brown sugar if desired.
Add more lemon juice for tartness if needed.
Cool and freeze any leftover applesauce for 6 to 12 months.
