Chop zucchini and yellow summer squash; you can use one or both for color.
Heat 1 tablespoon of olive oil in a wide skillet over medium heat.
Add the chopped onions and cook until they begin to sweat, about 2 minutes.
Stir in the chopped bell peppers, zucchini, and yellow summer squash; sauté until tender.
Stir in a little butter, salt, black pepper, and the minced garlic; mix well.
Serve the sautéed vegetables.
