Cut the vegetables into small pieces: carrots, cauliflower, bell peppers, green tomatoes, and cucumbers.
Add 2 heads of garlic to the mixture.
Add 5 tablespoons of salt, 450 ml of vinegar, and 5 tablespoons of sugar to the vegetables.
Let the mixture sit overnight to allow the vegetables to release their juices.
The next day, remove the liquid, add some water, and bring it to a boil.
Let the brine cool down before adding it back to the vegetables.
Sterilize the jars for 20-25 minutes before packing them with the pickled vegetables.
After packing, cover the vegetables with the cooled brine.
Let the jars sit for about one to two weeks before tasting.
