Start with 125 milliliters of whole milk and 170 milliliters of water in a bowl.
Whisk in 2.5 teaspoons of bread machine yeast until dissolved.
Add the yeast mixture to the bottom of a stand mixer along with 1 egg and 1 egg yolk.
Mix on medium-low speed.
In a separate bowl, combine 525 grams of bread flour and 60 grams of granulated sugar.
Add 4 grams of amylase to the flour mixture and whisk together.
Gradually add the flour mixture to the stand mixer while it's running, about a quarter cup at a time.
Mix until a smooth dough forms, about 1-2 minutes.
Incorporate 50 grams of unsalted softened butter into the dough.
Knead the dough on low speed until smooth and pulling from the sides of the bowl, about 10 minutes.
Shape the dough into a ball and place it in a greased bowl, cover with plastic wrap.
Let it rise for 45 minutes at room temperature, then refrigerate for 1.5 hours for slow proofing.
Break the dough into 90 gram pieces to make 8-10 pieces.
Prepare a baking sheet with cooking spray and lay down parchment paper.
Use 3.5 inch English muffin ring molds to shape the dough pieces, or create your own with foil.
Roll the dough into balls and place them in the center of the ring molds, spray with oil.
