In a cocktail shaker, add 1.5 ounces of Empress gin, 3/4 ounce of elderflower liqueur, 1 ounce of freshly squeezed lime juice, 1/2 ounce of simple syrup, and a couple of mint leaves.
Fill the shaker with ice and shake for about 10 seconds.
In a large glass filled with ice, add 3 ounces of dry sparkling wine.
Fine strain the cocktail mixture over the sparkling wine.
Garnish with a mint bouquet.
For the gin sangria, slice some fruits including green grapes, orange, and lemon.
In a glass, add 1 ounce of gin, a couple of slices of orange and lemon, 1/2 ounce of dry Curacao, 1/2 ounce of lemon juice, 1/2 ounce of simple syrup, and 3 ounces of semi bold red wine.
Fill the glass with ice and stir briefly to mix.
Add a couple of grapes and serve with a straw.
For the summer mission, in a blender, combine 80 grams of fresh pineapple pieces, 3 grams of mint leaves, 1.5 ounces of gin, 1/2 ounce of peach liqueur, 3/4 ounce of honey syrup, 3/4 ounce of freshly squeezed lime juice, and 180 grams of ice.
Blend at high speed until smooth and pour into a Tiki mug.
Garnish with grated frozen pineapple and a mint bouquet.
For the watermelon casino, in a cocktail shaker, add 2 ounces of gin and 3-4 pieces of watermelon and muddle to extract juice.
Add 1/2 ounce of simple syrup, 1/4 ounce of marshmallow liqueur, and 1 ounce of freshly squeezed lime juice.
Fill the shaker with ice and shake vigorously for about 10 seconds.
Fine strain into a chilled cocktail coupe and garnish with a piece of watermelon.
