1 onion, chopped
3 garlic cloves
1 beetroot, coarsely grated
1 carrot, julienned
1 potato, diced
200 g cabbage, julienned
3 tbsp vegetable oil
1 tbsp vinegar
1 tbsp tomato paste
salt

bay leaf
black peppercorns

Bring 1 cup of soaked beans in 1.5 liters of water to a boil and simmer.

Sauté chopped onion in 3 tbsp of vegetable oil over medium-high heat until translucent.

Add julienned carrot and sauté for 2 minutes.

Add coarsely grated beetroot and 1 tbsp of vinegar; mix well.

If necessary, add the rest of the beets; mix well and cover, then turn off the stove.

Simmer beans for 15 minutes, then add julienned cabbage and diced potato.

Cover and simmer for 20 minutes until potatoes and beans become soft.

Season with salt, sugar, bay leaf, and black peppercorns; mix well.

Add 3 minced garlic cloves, turn off the stove, and leave covered for 20 minutes.
